Mauritian cuisine blends the islands multicultural backgrounds with strong influences from Creole, Indian, Chinese and European ( mostly French ) cultures.
A long standing tie with France is apparent today with popular techniques common in Mauritian cooking although most often changed to suit the more exotic ingredients found throughout the islands.
Indian workers arriving and passing through the island in the 19th Century, left a noticeable imprint on the islands cuisine. Each with their own culinary tradition, depending on the region, the influences of both northern and southern Indian cuisine can be found on the island today. Dishes like curry and rougaille are popular although after many years, the Mauritian versions are quite different from the original Indian recipes.
Towards the end of the 19th century Chinese migrants, mostly from the south-east, started to arrive in Mauritius bringing another huge contrast in styles, techniques and flavour to the islands already mixed culinary past.
Being situated on the spice route and having a society that is accepting of culinary influence from neighbouring countries in the Indian Ocean, has made Mauritian cuisine one of the most exciting and daring regional cuisines around.
